In order to use the seaweed so as to maintain the effective properties of the plants that are useful for the body,
THREE RULES must be followed:
• FIRST rule: Seaweed must be harvested selecting the youngest and most vital plants in full respect of the environmental balance.
• SECOND rule: Airing and drying processes must take place immediately after harvesting using traditional methods.
• THIRD rule: Cold mixing and processing methods must be adopted in order to maintain and preserve the original characteristics of the plants.

LACOTE harvests its seaweed during the same period every year and from the same area of the ocean bed. Harvesting begins in May, when seaweed is young and vital. On boats, harvesters use an ancient tool known as “scoubidou” to extract plants from the seabed and remove all the water from them. Seaweed is brought ashore and then laid out in huge fields to be dried and aired by the sun and ocean winds.
