Wine Making | The grapes are produced in respect of the CEE 2078/92 agricultural and environmental program, set up in order to reduce the use phytopharmaceutical products during the cultivation. The fermentation lasts from 8 to 10 days; during this period of time, the temperature is checked. The fermenting process occurs in underground cellars, so that correct malolactic fermentation is guaranteed. Winter cold climatic exposition enables to make more than a decanting and allows the tartrates to fall. |
