What is dry-aged beef fridge
Fresh beef is dried and hardened in an environment with a specific wind speed (souring cabinet or souring chamber), allowing the inner layers of beef to naturally decompose and produce aroma, loosening the muscle fibres and softening the connective tissue, while the degradation of ATP in the muscle produces inosinic acid IMP, which is an aromatic heterocyclic compound, so the cooked beef will have a strong aroma.
