With a temperature range from -5°C to 10°C (23°F to 50°F) and a relative humidity of 60% to 85%, this fridge creates the perfect environment for the natural enzymatic and biochemical reactions that occur during the dry aging process. This results in meat that is exceptionally tender and flavorful, with a unique depth of taste that cannot be achieved with traditional wet aging methods.

One of the key benefits of dry aging is the concentration of flavors that occurs as moisture is evaporated from the meat.
