Whole Eston Lentils(Green) :
Small (4.5 – 5.5 mm) Eston Lentils are small lentils that are round in shape with a green seed coat and yellow inner seed.

 

They have a relatively neutral flavour and are a good source of nutrition for the body, as they contain sufficient levels of all essential amino acids.

 

However Lentils are the flattened, lens shaped edible seeds of the leguminous plant Lens culinaris. Laird lentils are large (6-7 mm) in diameter, have a green seed coat and yellow cotyledons. The size range is 60-70 grams/1000 seeds .

 

Whole Green Lentils, or "Lens esculenta," are a smaller, speckled variety of green lentils that are hearty and firm.

 

If desired, they can be cooked for a longer time, breaking down easily and acting as a thickening agent
