【Product details】




This authentic KIMOTO Junmai is made by the same tradition from 1000 years ago, no artificial ingredients using only water, rice, koji mold, Toji skills and passion and endurance.




It takes three days in koji making and one month in making yeast starter and slowly melt rice with low temperature by taking more than one month.

It is loved by world's famous Michelin restaurant chefs and high-end exclusive restaurants in Japan.

Aroma: Sweet aroma of koji, dairy products, warm aroma like vanilla ice cream.
Taste: Not sweet but rich, sweet-sour. Slightly sharp acidity. A little ginjo aroma. A hint of yeast No. 6, not the usual isoamyl type, deep but young.


【About Itakura Sake Brewery】







Itakura is located near Izumo Taisha Shrine in Shimane Prefecture, inherited the Sanin Ginjo-method of the Izumo Toji.
They have been improving our techniques with the concept of making sacred sake.

Every step of the process is tackled with time and the best techniques.





The koji making process, which normally takes two days, is designed to take three days to allow the rice to ferment slowly.
