Matsunohana Daiginjo "TOUJYU", made with the best rice, water, and brewing techniques, has a mellow aroma and delicate taste, and is our most popular sake. The origin of the name comes from the fact that TOUJYU NAKAE, the founder of Yangmingism, was born here in Takashima City, and we combined the image of TOUJYU's noble spirit with our high aspirations for sake brewing.
Awards
It was awarded a gold medal at the Monde Selection (world liquor contest) in June 2002 and at the 2007 National New Sake competition.
Daiginjo-shu is made from the highest quality rice (Yamada-nishiki, etc.), which has been polished to more than half its original size, and fermented at low temperatures for a long period of time during the winter brewing season. The resulting sake is different from other types of sake in that it has a lighter quality and a fruity aroma (ginjo aroma).
