The reason.
This sake has a refreshing taste and a faint ginjo aroma.
It has a mellow umami taste derived from Yamada Nishiki.
Umami spreads quickly.
The umami spreads quickly in the mouth and quickly recedes, giving it an excellent coolness. Ginjo-shu is made from the highest quality rice (Yamada-nishiki, etc.), which has been polished to more than half its original size, and fermented at low temperatures for a long period of time during the winter brewing season. The resulting sake is different from other types of sake in that it has a lighter quality and a fruity aroma (ginjo aroma).
