The rich in maotai- flavor is based on traditional brewing technology of thousand hundred years. That is called “12987 technology”, is oldest and most complex.The 1 means the liquor needs spending one year, the spending time is most longthy. The 2 means the liquor needs two times to batch cereals. The 9 means the liquor needs nine times to steam. The 8 means the liquor needs 8 times to ferment. The 7 means the liquor needs 7 times to get liquor. The crude liquor is made through these process,than put the crude liquor into cellar and spending 5 years at least. The liquor can be canned after spending 5 years at least. The more spending years the more precious,more valuable and more rich in maotai-flavor.
